EASY COCONUT CAKE

Certainly! Here’s a simple and delicious recipe for an easy coconut cake:

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

For the Coconut Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla extract
  • 2 cups shredded coconut (sweetened)

Instructions:

For the Cake:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugar:
    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add Eggs and Vanilla:
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Alternate Flour and Buttermilk:
    • Gradually add the dry ingredients to the butter mixture, alternating with buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  6. Divide and Bake:
    • Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool:
    • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

For the Coconut Frosting:

  1. Cream Butter:
    • In a large bowl, cream the softened butter until smooth.
  2. Add Powdered Sugar:
    • Gradually add the powdered sugar, beating well after each addition.
  3. Add Coconut Milk and Vanilla:
    • Add the coconut milk and vanilla extract. Beat until creamy and smooth.
  4. Frost the Cake:
    • Once the cakes are completely cooled, spread a layer of frosting on top of one cake layer. Place the second cake layer on top and frost the top and sides of the entire cake.
  5. Coat with Shredded Coconut:
    • Sprinkle the shredded coconut over the frosted cake, pressing it gently into the frosting.
  6. Slice and Enjoy:
    • Slice the cake and enjoy your easy and delicious coconut cake!
