  • 2 lbs beef stew meat (chuck roast, cut into 1–2″ cubes)

  • 4 cups beef broth

  • 4 medium carrots, peeled & chopped

  • 3 medium potatoes, peeled & diced (Yukon gold or russet)

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 3 tablespoons tomato paste (or ketchup in a pinch)

  • 2 tablespoons Worcestershire sauce

  • 1 teaspoon dried thyme

  • 1 teaspoon salt (adjust to taste)

  • Β½ teaspoon black pepper

  • 2 tablespoons cornstarch + 2 tablespoons water (for thickening)

  • 1 tablespoon olive oil (optional, for browning meat)

  1. (Optional) Brown the Beef:

    • In a skillet over medium-high heat, sear the beef in olive oil for a few minutes until browned on the outside. This adds flavor but is optional.

  2. Add Everything to the Slow Cooker:

    • Beef, carrots, potatoes, onion, garlic, tomato paste, Worcestershire sauce, thyme, salt, pepper, and beef broth.

  3. Cook:

    • Low: 7–8 hours

    • High: 4–5 hours

    • Until beef is tender and vegetables are cooked through.

  4. Thicken the Stew (Last 30 minutes):

    • Mix cornstarch and water in a small bowl until smooth.

    • Stir into the stew, cover, and let it cook 20–30 more minutes until thickened.

  5. Serve:

    • Taste and adjust seasoning if needed. Serve warm with crusty bread, rice, or over mashed potatoes.

  • Store in an airtight container in the fridge for up to 4 days.

  • Freezes well for up to 3 months. Reheat gently on the stovetop or microwave.
