Fiery Cajun Shrimp Stuffed Jalapeños

Ingredients:

  • For the Cajun Shrimp:

    • 1/2 lb medium shrimp, peeled and deveined
    • 1 tablespoon olive oil
    • 1 teaspoon Cajun seasoning (or more to taste)
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon paprika
    • 1/4 teaspoon onion powder
    • Salt and pepper, to taste
    • 1 tablespoon fresh parsley or cilantro, chopped (for garnish)
  • For the Stuffed Jalapeños:

    • 10-12 fresh jalapeños (adjust depending on how many you want to make)
    • 4 oz cream cheese, softened
    • 1/4 cup shredded cheddar cheese (or a cheese blend)
    • 1/4 cup shredded mozzarella cheese (optional)
    • 1 tablespoon sour cream or mayonnaise (optional, for creaminess)
    • 1 tablespoon fresh lime juice
    • 1/4 teaspoon garlic powder
    • Salt and pepper, to taste
    • Fresh cilantro or parsley, chopped (for garnish)
    • 1/2 cup breadcrumbs (optional, for a crunchy topping)

Instructions:

  1. Prepare the Cajun Shrimp:

    • Heat the olive oil in a skillet over medium heat.
    • In a small bowl, season the shrimp with Cajun seasoning, garlic powder, paprika, onion powder, salt, and pepper.
    • Add the shrimp to the skillet and cook for about 2-3 minutes on each side, or until they turn pink and are cooked through.
    • Remove the shrimp from the skillet and set them aside to cool slightly. Once cooled, chop the shrimp into small bite-sized pieces.
  2. Prepare the Jalapeños:

    • Preheat your oven to 375°F (190°C).
    • Slice the jalapeños in half lengthwise and remove the seeds and membranes (you can leave some seeds if you want extra heat).
    • Place the jalapeño halves on a baking sheet lined with parchment paper or foil.
  3. Make the Creamy Filling:

    • In a bowl, combine the softened cream cheese, shredded cheddar cheese, mozzarella (if using), sour cream or mayonnaise, lime juice, garlic powder, salt, and pepper.
    • Add the chopped Cajun shrimp into the filling mixture and stir everything together until well combined.
  4. Stuff the Jalapeños:

    • Spoon the creamy shrimp mixture into each jalapeño half, filling them generously.
    • If you like a crunchy topping, sprinkle breadcrumbs on top of each stuffed jalapeño.
  5. Bake the Stuffed Jalapeños:

    • Place the stuffed jalapeños in the preheated oven and bake for 15-20 minutes, or until the cheese is melted, bubbly, and slightly golden. If you added breadcrumbs, they should be lightly toasted.
