Flan cheese cake

Posted on November 3, 2023

Flan cheesecake, also known as “flan de queso,” is a delightful dessert that combines the creamy richness of cheesecake with the caramelized sweetness of flan (a custard dessert). Here’s a recipe to make this heavenly dessert:

Ingredients:

For the Flan Layer:

  • 1 cup granulated sugar
  • 1/4 cup water
  • 4 large eggs
  • 1 can (14 ounces) sweetened condensed milk
  • 1 can (12 ounces) evaporated milk
  • 1 teaspoon vanilla extract

For the Cheesecake Layer:

  • 2 cups cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions:

For the Flan Layer:

  1. Start by preheating your oven to 350°F (175°C).
  2. In a saucepan, combine the granulated sugar and water for the caramel. Heat it over medium-high heat without stirring. Swirl the pan occasionally to ensure even caramelization. Cook until the sugar turns a deep amber color.
  3. Quickly pour the caramel into the bottom of a 9-inch round cake pan or a flan mold, swirling to coat the bottom evenly. Be careful as the caramel is very hot.
  4. In a mixing bowl, whisk together the eggs, sweetened condensed milk, evaporated milk, and vanilla extract until well combined.
  5. Pour the flan mixture over the caramel layer in the pan.

For the Cheesecake Layer:

  1. In a separate mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy.
  2. Add the eggs and vanilla extract to the cream cheese mixture and beat until well combined.
  3. Carefully pour the cheesecake mixture over the flan layer in the pan.
  4. Cover the pan with aluminum foil.
  5. Place the covered pan in a larger baking dish. Add hot water to the larger baking dish, creating a water bath (bain-marie). The water should come about halfway up the side of the flan pan.
  6. Bake in the preheated oven for about 1 hour, or until the flan is set. The cheesecake layer should also be firm when lightly touched.
  7. Remove the pan from the oven and let it cool to room temperature.
  8. Once cooled, refrigerate the flan cheesecake for several hours or overnight to allow it to set and chill.
  9. When ready to serve, run a knife around the edge of the pan to loosen the flan cheesecake. Place a serving platter over the top of the pan, invert it, and carefully lift the pan away.
  10. The caramel will flow over the top, creating a delicious glaze. Slice and serve.

Flan cheesecake is a heavenly dessert that combines two beloved desserts in one. The creaminess of the cheesecake and the rich caramel flavor of the flan make for a delightful treat. Enjoy!
