For BEEF ENCHILADAS with extra cheese on top

Here’s a delicious recipe for Beef Enchiladas with extra cheese on top. This cheesy, savory dish is a favorite for family dinners or gatherings. The combination of seasoned beef, flavorful enchilada sauce, and loads of melted cheese makes it irresistible!

Ingredients:

For the Filling:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp oregano
  • Salt and pepper, to taste
  • 1 cup refried beans (optional, for extra filling)
  • 1 ½ cups shredded cheddar cheese or Mexican blend cheese

For the Enchiladas:

  • 12 corn tortillas (or flour tortillas)
  • 2 cups enchilada sauce (store-bought or homemade)
  • 2 cups shredded cheddar cheese or Mexican blend cheese (for topping)
  • ¼ cup sliced black olives (optional)
  • ¼ cup chopped green onions, for garnish
  • Fresh cilantro, for garnish
  • Sour cream, for serving

Instructions:

Step 1: Prepare the Filling

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it up with a spoon.
  3. Add the onion and garlic to the skillet and sauté until the onion is soft, about 3-4 minutes.
  4. Stir in the cumin, chili powder, paprika, oregano, salt, and pepper. Cook for another 2-3 minutes until the spices are fragrant.
  5. Optional: Mix in the refried beans to add extra texture and volume to the filling.
  6. Remove from heat and stir in 1 ½ cups of shredded cheese.

Step 2: Assemble the Enchiladas

  1. Warm the tortillas to make them pliable (you can microwave them wrapped in a damp paper towel for 30 seconds).
  2. Pour ½ cup of enchilada sauce into the bottom of a 9×13-inch baking dish.
  3. Take each tortilla, fill it with a spoonful of the beef mixture, and roll it up tightly. Place the rolled enchiladas seam-side down in the prepared baking dish.

Step 3: Add Sauce and Cheese

  1. Once all the enchiladas are in the dish, pour the remaining enchilada sauce evenly over the top of them.
  2. Sprinkle the 2 cups of shredded cheese generously on top. (If you want extra cheesy enchiladas, feel free to add even more cheese!)

Step 4: Bake

  1. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  2. Optional: Add sliced black olives to the top during the last few minutes of baking.

Step 5: Garnish and Serve

  1. Garnish with chopped green onions and fresh cilantro.
  2. Serve hot with sour cream and a side of Mexican rice or refried beans.

Tips:

  • You can make your own enchilada sauce by blending canned tomatoes, chilies, garlic, and spices for a fresher flavor.
  • For a spicier kick, add some diced jalapeños or chili flakes to the beef mixture.
