French Onion Grilled Cheese

A French Onion Grilled Cheese sandwich is a tasty twist on the classic grilled cheese. It incorporates the rich, savory flavors of French onion soup into a gooey and delicious grilled cheese sandwich. Here’s how to make it:

Ingredients:

For the French Onion Filling:

  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1/4 cup beef broth or beef consommé
  • Salt and pepper to taste
  • 1/4 cup grated Gruyère cheese

For the Grilled Cheese:

  • 4 slices of your favorite bread (French bread or sourdough works well)
  • 4 slices of Swiss cheese
  • 4 slices of Gruyère cheese
  • Butter for spreading

Instructions:

1. Caramelize the Onions: In a large skillet, heat the butter and olive oil over medium heat. Add the thinly sliced onions and cook them slowly, stirring occasionally, until they turn a deep golden brown and are caramelized, which may take about 20-30 minutes. Sprinkle sugar over the onions to help with caramelization. Season with salt and pepper to taste.

2. Add Beef Broth: Once the onions are caramelized, pour in the beef broth or beef consommé and let it simmer for a few more minutes until the liquid is mostly absorbed. Remove from heat.

3. Assemble the Sandwiches: Butter one side of each slice of bread. On the non-buttered side of two slices, place a slice of Swiss cheese. On the other two slices, place a slice of Gruyère cheese.

4. Add Caramelized Onions: Spoon the caramelized onion mixture evenly onto the Gruyère cheese slices.

5. Make the Grilled Cheese: Place the Swiss cheese slices on top of the onions. Close the sandwiches with the other bread slices, buttered side out.

6. Cook the Grilled Cheese: In a skillet or on a griddle over medium heat, cook the sandwiches until the bread is golden brown and the cheese is melty. It usually takes 3-4 minutes per side.

7. Serve: Once both sides are crispy and the cheese is melted, remove the sandwiches from the heat. Let them cool for a minute, then cut in half and serve.
