Posted on March 3, 2025

Here’s a delicious and comforting recipe for French Onion Ground Beef and Rice Casserole! This dish combines savory ground beef, aromatic French onion soup, and tender rice for a meal that’s both easy and satisfying.

Ingredients:

For the Casserole:

  • 1 lb ground beef
  • 1 cup long-grain white rice (uncooked)
  • 1 can (10.5 oz) French onion soup (canned or homemade)
  • 1 cup beef broth (low-sodium)
  • 1 medium onion (chopped)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for sautéing)

Optional Garnish:

  • Fresh parsley (chopped)
  • Additional shredded cheese

Instructions:

1. Preheat the Oven and Prepare the Rice:

  • Preheat the oven: Preheat your oven to 350°F (175°C).
  • Cook the rice: In a medium saucepan, cook the rice according to the package instructions (usually 1 cup rice to 2 cups water or broth). Set aside.

2. Brown the Ground Beef:

  • Cook the beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and fully cooked (about 5-7 minutes).
  • Drain excess fat: If there’s any excess fat in the pan, drain it off.
  • Sauté the onion: Add the chopped onion to the pan with the beef and sauté for another 3-4 minutes, until softened and lightly browned.

3. Combine the Ingredients:

  • Add seasonings: Stir in the garlic powder, dried thyme (if using), salt, and pepper to the beef and onion mixture.
  • Mix the liquids: Pour in the French onion soup and beef broth, then stir everything to combine. Bring the mixture to a simmer and cook for 2-3 minutes to let the flavors meld.

4. Assemble the Casserole:

  • Combine with rice: In a large casserole dish, combine the cooked rice with the beef and onion mixture. Stir everything together to ensure it’s evenly distributed.
  • Add cheese: Sprinkle the shredded cheese over the top of the casserole, covering it evenly.

5. Bake the Casserole:

  • Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

6. Serve:

  • Garnish (optional): Remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh parsley or additional cheese, if desired.
  • Serve: Scoop out generous portions and enjoy this hearty, flavorful meal!

Tips:

  • For extra richness: If you like extra cheesy casseroles, feel free to add more cheese both inside the casserole and on top before baking.
  • Make it ahead: You can assemble the casserole ahead of time and refrigerate it until ready to bake. Just bake it for 30-35 minutes if it’s coming directly from the fridge.
  • Ground beef alternatives: You can substitute ground turkey or chicken for a lighter version, or add some sautéed mushrooms for extra flavor.

This French Onion Ground Beef and Rice Casserole is comforting and packed with flavor. The combination of French onion soup and melted cheese brings a rich, savory depth to the dish. Perfect for busy weeknights! Let me know if you need any variations or further tips.
