Here’s a vibrant, hearty, and totally delicious recipe for Garden Tortellini Pasta Salad 🥗🌿—packed with tender cheese tortellini, fresh garden veggies, and a zippy dressing. It’s perfect for potlucks, summer lunches, or an easy meatless dinner.


🥒🌽 Garden Tortellini Pasta Salad

🧂 Ingredients:

  • 1 (20 oz) package cheese tortellini (fresh or frozen)

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, chopped

  • 1 cup bell pepper, diced (any color)

  • ½ cup shredded carrots

  • ½ cup red onion, thinly sliced

  • ½ cup corn kernels (fresh, canned, or thawed from frozen)

  • ½ cup black olives, sliced (optional)

  • ½ cup crumbled feta or shredded parmesan

  • ¼ cup fresh basil or parsley, chopped

For the Dressing:

  • ⅓ cup olive oil

  • 2 tbsp red wine vinegar (or lemon juice)

  • 1 tbsp Dijon mustard

  • 1 tsp garlic powder or 1 clove minced garlic

  • 1 tsp Italian seasoning

  • Salt & pepper to taste


👩‍🍳 Instructions:

  1. Cook Tortellini:

    • Cook according to package directions. Drain and rinse with cold water to cool.

    • Toss with a little olive oil to prevent sticking.

  2. Prep the Veggies:

    • While tortellini cools, chop all your fresh vegetables.

  3. Make the Dressing:

    • In a jar or bowl, whisk together olive oil, vinegar, mustard, garlic, Italian seasoning, salt, and pepper.

  4. Assemble Salad:

    • In a large bowl, combine tortellini, veggies, and cheese.

    • Drizzle with dressing and toss gently to coat.

  5. Chill or Serve:

    • Let sit for 30 minutes in the fridge for best flavor, or serve immediately.

  • Add grilled chicken, chickpeas, or pepperoni for protein.
