Garlic Parmesan Chicken Meatloaves

Ingredients:

  • For the Meatloaves:
    • 1 lb (450g) ground chicken
    • 1/2 cup grated Parmesan cheese
    • 1/2 cup breadcrumbs (Italian-style or plain)
    • 1/4 cup milk
    • 1 large egg
    • 3 cloves garlic, minced
    • 1 small onion, finely chopped
    • 1/4 cup fresh parsley, chopped
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • For the Topping:
    • 1/4 cup grated Parmesan cheese
    • 1/4 cup shredded mozzarella cheese
    • 1 tablespoon olive oil
    • 1 clove garlic, minced
    • 1 teaspoon fresh parsley, chopped (for garnish)

Instructions:

1. Preheat Oven:

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a baking dish.

2. Prepare the Meatloaf Mixture:

  • In a large mixing bowl, combine the ground chicken, grated Parmesan, breadcrumbs, milk, egg, minced garlic, chopped onion, parsley, oregano, basil, salt, pepper, and red pepper flakes. Mix well until all the ingredients are fully incorporated.

3. Form the Meatloaves:

  • Divide the meat mixture into 4 equal portions. Shape each portion into a small loaf and place them on the prepared baking sheet or in the baking dish.

4. Prepare the Topping:

  • In a small bowl, mix together the grated Parmesan, shredded mozzarella, olive oil, and minced garlic.

5. Bake the Meatloaves:

  • Spoon the topping mixture evenly over each meatloaf.
  • Bake in the preheated oven for 25-30 minutes, or until the meatloaves are cooked through (internal temperature should reach 165°F or 74°C) and the tops are golden and bubbly.

6. Garnish and Serve:

  • Once done, remove the meatloaves from the oven and let them rest for a few minutes.
  • Garnish with fresh parsley before serving.
