Here’s a flavorful Garlic Parmesan Chicken Skewers recipe that’s perfect for grilling or baking! The juicy chicken, combined with garlic, Parmesan cheese, and herbs, creates a delicious, savory bite every time.

Ingredients:

  • 1 ½ lbs chicken breasts, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup Parmesan cheese, grated
  • 1 tbsp fresh parsley, chopped (or 1 tsp dried parsley)
  • 1 tsp Italian seasoning
  • 1 tsp lemon juice
  • Salt and pepper, to taste
  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes if grilling)

Instructions:

Step 1: Prepare the Chicken

  1. In a large bowl, mix together the olive oil, minced garlic, Parmesan cheese, parsley, Italian seasoning, lemon juice, salt, and pepper.
  2. Add the chicken cubes to the bowl and toss to coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes (up to 2 hours for maximum flavor).

Step 2: Skewer the Chicken

  1. Once marinated, thread the chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

Step 3: Cook the Chicken Skewers

  • Grilling: Preheat the grill to medium-high heat. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F/75°C) and slightly charred.
  • Baking: Preheat the oven to 400°F (200°C). Place the skewers on a baking sheet lined with parchment paper or foil. Bake for 20-25 minutes, turning once halfway through, until the chicken is fully cooked.

Step 4: Serve

Remove the skewers from the heat and serve with a sprinkle of extra Parmesan cheese and fresh parsley. Serve alongside your favorite dipping sauces or a simple side salad.

Tips:

  • You can add vegetables like bell peppers, onions, or zucchini to the skewers for extra flavor and color.
  • If you prefer extra crispiness, broil the skewers for the last 2-3 minutes of cooking in the oven.
