Garlicky Shrimp Scampi with Linguine
Garlicky Shrimp Scampi with Linguine is a classic Italian-American dish that combines tender shrimp, garlic, lemon, and a buttery white wine sauce over a bed of linguine. It’s quick, delicious, and perfect for any occasion.
Ingredients:
- For the Pasta:
- 12 ounces linguine
- Salt, for the pasta water
- For the Shrimp Scampi:
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 5 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine (such as Sauvignon Blanc)
- 1/4 cup freshly squeezed lemon juice (about 2 lemons)
- Zest of 1 lemon
- Salt and freshly ground black pepper, to taste
- 1/4 cup chopped fresh parsley
- Lemon wedges, for serving
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Cook the linguine according to the package instructions until al dente.
- Drain the pasta, reserving 1/2 cup of the pasta water, and set aside.
- Prepare the Shrimp:
- Pat the shrimp dry with paper towels and season with salt and pepper.
- Cook the Shrimp:
- In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.
- Add the shrimp to the skillet in a single layer and cook for about 2 minutes per side, until pink and opaque. Remove the shrimp from the skillet and set aside.
- Make the Sauce:
- In the same skillet, add the minced garlic and red pepper flakes (if using). Cook for about 1 minute, until fragrant.
- Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Let the mixture simmer for 2-3 minutes, reducing slightly.
- Add the remaining 2 tablespoons of butter and lemon zest, stirring until the butter is melted and the sauce is well combined.
- Combine:
- Return the cooked shrimp to the skillet, tossing to coat in the sauce.
- Add the cooked linguine to the skillet, tossing everything together until the pasta is well coated. If the sauce is too thick, add a bit of the reserved pasta water to loosen it.
- Serve:
- Stir in the chopped parsley and adjust the seasoning with salt and pepper if needed.
- Serve immediately with lemon wedges on the side.
Tips:
- Wine Substitute: If you prefer not to use wine, you can substitute it with chicken broth.
- Freshness: Use fresh shrimp for the best flavor. Frozen shrimp can be used but make sure to thaw them completely and pat them dry before cooking.
- Pasta Alternatives: You can use other types of pasta like spaghetti, fettuccine, or angel hair if you prefer.
