Here’s a simple and delicious recipe for golden seared cod that’s perfect for a quick weeknight dinner!

Ingredients:

  • 2 cod fillets (about 6 oz each)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon garlic, minced (optional)
  • Fresh lemon wedges, for serving
  • Fresh herbs (like parsley or dill), for garnish (optional)

Instructions:

  1. Prepare the Cod: Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
  2. Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the butter and let it melt.
  3. Sear the Cod: Carefully place the cod fillets in the skillet, skin-side down (if the skin is on). Cook for about 3-4 minutes without moving them, until the bottom is golden brown.
  4. Flip and Add Garlic: Gently flip the fillets over using a spatula. If using garlic, add it to the pan now. Cook for an additional 3-4 minutes, or until the fish is cooked through and flakes easily with a fork.
  5. Serve: Remove the cod from the pan and serve immediately with lemon wedges. Garnish with fresh herbs if desired.

Tips:

  • You can serve the cod with a side of steamed vegetables, a salad, or over a bed of quinoa or rice.
  • For added flavor, you can sprinkle some paprika or cayenne pepper on the fillets before cooking.
