Goulash soup

Goulash soup is a hearty and flavorful dish, originating from Hungary, known for its rich, paprika-infused broth, tender beef, and vegetables. Here’s a traditional recipe:

Hungarian Goulash Soup

Ingredients:

  • 1 ½ pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil or lard
  • 2 large onions, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons sweet Hungarian paprika
  • 1 teaspoon hot paprika (optional, for heat)
  • 1 teaspoon caraway seeds
  • 1 tablespoon tomato paste
  • 4 cups beef broth
  • 2 cups water
  • 2 large carrots, sliced
  • 2 medium potatoes, peeled and cubed
  • 1 green bell pepper, diced
  • 1 large tomato, chopped
  • 2 bay leaves
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Brown the Beef:
    • In a large pot, heat the oil or lard over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef and set it aside.
  2. Cook Onions and Garlic:
    • In the same pot, add the chopped onions and cook until they are soft and golden. Add the garlic and cook for another minute.
  3. Add Paprika and Spices:
    • Stir in the sweet Hungarian paprika, hot paprika (if using), and caraway seeds. Cook for about 1-2 minutes, making sure not to burn the paprika.
  4. Deglaze and Simmer:
    • Add the tomato paste and cook for another minute. Deglaze the pot by adding the beef broth and water. Stir well, scraping the bottom to release any browned bits. Return the beef to the pot.
  5. Add Vegetables:
    • Add the carrots, potatoes, green bell pepper, tomato, and bay leaves. Season with salt and pepper. Bring the soup to a boil, then reduce the heat to low.
  6. Simmer:
    • Cover the pot and let the soup simmer gently for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
  7. Adjust Seasoning:
    • Taste the soup and adjust the seasoning with more salt, pepper, or paprika if needed.
  8. Serve:
    • Ladle the goulash soup into bowls and garnish with freshly chopped parsley. Serve with crusty bread on the side.
