Ingredients

  • 4 bone-in or boneless pork chops (1-inch thick)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (or regular paprika)
  • 1 teaspoon dried thyme (or your favorite herb)
  • 1 tablespoon butter
  • 1/2 cup chicken broth (or apple cider for a sweeter flavor)
  • 1 tablespoon Dijon mustard (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prepare the Pork Chops:

  • Take the pork chops out of the fridge and let them sit at room temperature for about 30 minutes before cooking. This helps them cook more evenly.
  • Pat them dry with paper towels. Season both sides generously with salt, pepper, garlic powder, smoked paprika, and thyme.

2. Sear the Pork Chops:

  • Heat olive oil in a large skillet over medium-high heat. When the oil is hot, add the pork chops.
  • Sear for about 3-4 minutes on each side until they are golden brown and have a nice crust. Use tongs to flip them carefully.

3. Add Flavor:

  • Once the pork chops are seared, reduce the heat to medium. Add the butter to the skillet and let it melt.
  • Pour in the chicken broth (or apple cider) and stir in the Dijon mustard, if using. This creates a flavorful sauce and helps keep the pork moist.

4. Cook Through:

  • Cover the skillet and let the pork chops simmer in the broth for about 5-10 minutes, depending on thickness, until they reach an internal temperature of 145°F (63°C).
  • Remove the pork chops from the skillet and let them rest for a few minutes before serving. This helps retain their juices.

5. Serve:

  • Drizzle some of the pan sauce over the pork chops and garnish with fresh parsley.
