Here’s a flavorful and gooey dish that brings bold Southwestern flair to your table: Green Chile Cheese with Garlic Butter. 🧄🧀🌶️ Perfect as an appetizer, a dip, or a cheesy topping, this recipe delivers rich, buttery, slightly spicy, and totally satisfying bites.


🧄🌶️ Green Chile Cheese with Garlic Butter

🧂 Ingredients:

  • 2 cups shredded Monterey Jack or pepper jack cheese

  • 1 cup shredded cheddar

  • 1 (4 oz) can diced green chiles, drained (or use roasted fresh Hatch green chile if available)

  • 3 tbsp unsalted butter

  • 3–4 cloves garlic, minced

  • ¼ tsp onion powder

  • Salt & pepper to taste

  • Optional: 2 tbsp cream cheese for extra richness

  • Optional garnish: chopped cilantro, green onions, or a squeeze of lime


🔥 Instructions:

  1. Preheat Oven (if baking):
    Preheat to 375°F (190°C). You can also do this stovetop if preferred.

  2. Make Garlic Butter:

    • In a small saucepan or skillet, melt the butter over medium heat.

    • Add the minced garlic and cook for 1–2 minutes until fragrant (don’t let it brown).

    • Stir in onion powder, a pinch of salt, and pepper.

  3. Combine Cheese & Chiles:

    • In a mixing bowl, toss together the cheeses and green chiles.

    • Pour in the garlic butter and mix until evenly coated.

    • (Optional: mix in cream cheese for an extra creamy texture.)

  4. Bake or Melt:

    • To Bake: Spread mixture in a small oven-safe dish and bake for 12–15 minutes, or until bubbly and golden on top.

    • Stovetop Method: Add mixture to a skillet and stir gently over low heat until fully melted and gooey.

  5. Serve:

    • Serve hot with warm tortillas, tortilla chips, crusty bread, or spoon over grilled chicken or veggies.
