Ingredients:

  • 2 cups cooked, shredded chicken breast (skinless, boneless)
  • 1 ripe avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup celery, finely chopped
  • 1/4 cup cilantro, chopped (optional)
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon paprika (optional)
  • 1 tablespoon Greek yogurt or light mayo (optional for creaminess)

Instructions:

  1. Prepare the Chicken:
    • If you haven’t already, cook the chicken breast by boiling, grilling, or baking until fully cooked and then shred it with a fork. Let it cool slightly.
  2. Combine the Ingredients:
    • In a large bowl, mix the shredded chicken, diced avocado, chopped red onion, cherry tomatoes, celery, and cilantro.
  3. Season the Salad:
    • Drizzle the lime juice over the salad and gently toss to combine. Season with salt, pepper, garlic powder, and paprika to taste. If you prefer a creamier texture, mix in the Greek yogurt or light mayo.
