Here’s a comforting and filling recipe for Hearty Homestead Mulligan Stew. This traditional stew is loaded with meat, vegetables, and a rich broth, making it perfect for a cozy meal.

Hearty Homestead Mulligan Stew

Ingredients

  • 1 lb (450g) beef stew meat, cubed
  • 1/2 lb (225g) pork stew meat, cubed (optional)
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 1 cup red wine (optional)
  • 4 large carrots, peeled and sliced
  • 3 large potatoes, peeled and cubed
  • 2 stalks celery, sliced
  • 1 cup frozen peas
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup green beans, chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons flour (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the Meat:
    • Season the beef and pork stew meat with salt and black pepper. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the meat in batches and brown on all sides. Remove the meat and set aside.
  2. Sauté the Aromatics:
    • In the same pot, add the chopped onion and garlic. Sauté for 3-4 minutes, or until the onion is translucent.
  3. Deglaze the Pot:
    • Pour in the red wine (if using) and cook for 2-3 minutes, scraping up any browned bits from the bottom of the pot. If not using wine, proceed to the next step with beef broth.
  4. Add the Broth and Meat:
    • Return the browned meat to the pot. Add the beef broth, water, and Worcestershire sauce. Stir to combine.
  5. Simmer the Stew:
    • Add the carrots, potatoes, celery, diced tomatoes (with juice), bay leaves, thyme, rosemary, and paprika. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 to 1.5 hours, or until the meat is tender.
  6. Add the Vegetables:
    • Stir in the peas, corn, and green beans. Simmer for an additional 20-30 minutes, or until all the vegetables are tender.
  7. Thicken the Stew (Optional):
    • If you prefer a thicker stew, mix 2 tablespoons of flour with 2 tablespoons of water to form a slurry. Stir the slurry into the stew and cook for an additional 5-10 minutes, until the stew has thickened.
  8. Serve:
    • Remove the bay leaves. Ladle the stew into bowls and garnish with chopped fresh parsley.
