Homemade beef vegetable soup is a comforting and nutritious dish that’s perfect for any time of the year. Here’s a simple recipe to make it:

Ingredients:

  • 1 lb beef stew meat, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups water
  • 2 carrots, peeled and sliced
  • 2 stalks celery, chopped
  • 2 potatoes, peeled and diced
  • 1 cup green beans, trimmed and cut into bite-sized pieces
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions:

  1. In a large soup pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed beef stew meat and brown on all sides, about 5-6 minutes. Remove the beef from the pot and set aside.
  2. In the same pot, add the chopped onion and garlic. Sauté until softened and fragrant, about 3-4 minutes.
  3. Return the browned beef to the pot. Add the beef broth and water, scraping up any browned bits from the bottom of the pot.
  4. Add the carrots, celery, potatoes, green beans, diced tomatoes (with their juices), dried thyme, and dried rosemary to the pot. Season with salt and pepper to taste.
  5. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 1 to 1 1/2 hours, or until the beef and vegetables are tender.
  6. Taste and adjust the seasoning if needed. Add more salt and pepper as desired.
  7. Serve the homemade beef vegetable soup hot, garnished with chopped fresh parsley if desired.

Feel free to customize this recipe by adding other vegetables such as peas, corn, or spinach. You can also add barley or pasta for a heartier soup. Adjust the cooking time accordingly based on the vegetables you choose to include.
