Homemade Mexican Pizza

Here’s a delicious recipe for Homemade Mexican Pizza that’s easy to make and full of flavor:

Ingredients:

  • For the pizza crust:
    • 4 small flour tortillas (or 2 large ones, cut in half)
    • Olive oil (for brushing)
  • For the pizza toppings:
    • 1 lb ground beef or ground turkey (optional, or use beans for a vegetarian option)
    • 1 packet taco seasoning (or homemade seasoning)
    • 1/2 cup water (for taco seasoning)
    • 1 can (8 oz) refried beans (optional for extra flavor)
    • 1 cup shredded Mexican cheese blend (cheddar, Monterey Jack, etc.)
    • 1/2 cup salsa or enchilada sauce
    • 1/2 cup chopped tomatoes
    • 1/4 cup sliced black olives (optional)
    • 1/4 cup sliced green onions
    • 1/2 cup chopped lettuce
    • Sour cream (optional, for topping)
    • Jalapeño slices (optional, for spice)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the tortillas:
    • Brush both sides of the tortillas with olive oil. This will make them crispy when baked.
    • Place the tortillas on a baking sheet in a single layer and bake in the preheated oven for 5-7 minutes, or until they are crispy and golden brown.
  3. Cook the meat (if using):
    • In a skillet over medium heat, cook the ground beef or turkey until browned, breaking it up as it cooks.
    • Once browned, add the taco seasoning and water (according to package instructions) and simmer for 5 minutes to let the flavors meld together.
  4. Assemble the pizza:
    • Once the tortillas are crispy, spread a layer of refried beans on top of each tortilla (if using).
    • Add the cooked meat or beans on top of the refried beans.
    • Spoon some salsa or enchilada sauce on top, followed by a sprinkle of shredded cheese.
    • If you like, add a few slices of black olives.
  5. Bake the pizza:
    • Place the assembled pizzas back in the oven for 5-7 minutes or until the cheese is melted and bubbly.
  6. Add fresh toppings:
    • Remove the pizzas from the oven and top with fresh ingredients like chopped tomatoes, green onions, lettuce, jalapeños, and a dollop of sour cream.
  7. Serve and enjoy!:
    • Slice the pizzas into wedges and serve hot!

This recipe is super customizable – you can adjust the toppings to your liking or swap out the ground beef for beans or grilled chicken for a different flavor. Enjoy your homemade Mexican pizza!
