🍑 Homemade Peach Ice Cream
📝 Ingredients:
-
3 cups ripe peaches (peeled, pitted, and chopped – about 4–5 medium peaches)
-
3/4 cup granulated sugar (divided)
-
2 tsp lemon juice
-
1½ cups heavy cream
-
1 cup whole milk
-
1 tsp vanilla extract
-
Pinch of salt
🍨 With Ice Cream Maker:
1. Prepare the Peaches:
-
In a saucepan, combine peaches, 1/4 cup sugar, and lemon juice.
-
Cook over medium heat for about 5–7 minutes until peaches soften and release juices.
-
Lightly mash the peaches (leave some chunks if you like texture) and let cool.
-
Chill in the fridge.
2. Make the Ice Cream Base:
-
In a mixing bowl, whisk together the cream, milk, remaining 1/2 cup sugar, vanilla, and salt until sugar dissolves.
-
Stir in the chilled peaches.
3. Churn:
-
Pour the mixture into your ice cream maker and churn according to manufacturer’s instructions (usually about 20–25 minutes).
-
Transfer to a lidded container and freeze for at least 4 hours, or until firm.
🍦 No Ice Cream Maker? No Problem!
1. Prepare the peach mixture and base as above.
2. Whip 1 cup of the cream until soft peaks form.
3. Fold the whipped cream into the peach base (plus the remaining 1/2 cup cream and milk).
4. Pour into a freezer-safe container, cover, and freeze for 6–8 hours, stirring every hour or so for the first 3 hours for better texture.
🍑 Optional Add-Ins:
-
Crushed graham crackers or pie crust chunks (for a “peach pie” vibe)
-
Toasted pecans or almonds
-
A swirl of honey or caramel
