Irresistible German Chocolate Cake

Posted on September 27, 2024
German Chocolate Cake is a rich and indulgent dessert, featuring layers of moist chocolate cake with a decadent coconut-pecan frosting. Here’s a recipe for an irresistible version:

Ingredients:

For the Cake:

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar, let sit for 5 minutes)
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Coconut-Pecan Frosting:

  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 large egg yolks
  • ½ cup unsalted butter, cubed
  • 1 tsp vanilla extract
  • 1 ½ cups sweetened shredded coconut
  • 1 cup chopped pecans

Instructions:

For the Cake:

  1. Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans, then line the bottoms with parchment paper.
  2. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another large bowl, whisk together sugar, eggs, buttermilk, oil, and vanilla until smooth.
  4. Gradually mix the dry ingredients into the wet mixture. Slowly pour in the boiling water, stirring until the batter is smooth (it will be thin, but that’s okay!).
  5. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

For the Coconut-Pecan Frosting:

  1. In a medium saucepan, combine evaporated milk, sugar, egg yolks, and butter. Cook over medium heat, stirring constantly until thickened (about 10-12 minutes).
  2. Remove from heat and stir in vanilla, coconut, and pecans. Let the frosting cool completely before using.

Assembling the Cake:

  1. Once the cakes have cooled, place the first layer on a serving plate. Spread a generous amount of the coconut-pecan frosting on top.
  2. Repeat with the second layer, then frost the top layer with the remaining frosting.
  3. Optionally, decorate the sides of the cake with a rich chocolate ganache or additional frosting.

Enjoy this irresistible German Chocolate Cake for any special occasion, or just as a treat!
