Here’s a delicious recipe for Italian Cream Cake, a rich and flavorful dessert that’s perfect for any occasion!

Italian Cream Cake Recipe

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 5 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup shredded coconut
  • 1 cup chopped pecans or walnuts

For the Cream Cheese Frosting:

  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped pecans (for garnish)

Instructions

1. Prepare the Oven and Pans:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour three 9-inch round cake pans.

2. Make the Cake:

  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  • In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Add the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Alternately add the flour mixture and buttermilk to the butter mixture, starting and ending with the flour. Mix until just combined.
  • Gently fold in the shredded coconut and chopped pecans.
  • In a separate bowl, beat the egg whites until stiff peaks form. Carefully fold the egg whites into the cake batter.

3. Bake:

  • Divide the batter evenly among the prepared pans.
  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

4. Make the Frosting:

  • In a large bowl, beat the cream cheese and softened butter together until smooth.
  • Gradually add the powdered sugar, mixing until well combined.
  • Stir in the vanilla extract.

5. Assemble the Cake:

  • Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top.
  • Add the second layer and repeat the frosting process.
  • Place the third layer on top and frost the top and sides of the cake.
  • Garnish with additional chopped pecans on top.

6. Serve:

  • Slice and enjoy your delicious Italian Cream Cake!
