KETO CHEESY CHICKEN FRITTERS

Here’s a recipe for keto cheesy chicken fritters that are flavorful, low-carb, and easy to make:Ingredients:

  • 1 lb (about 450g) ground chicken
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional)
  • 2 tablespoons olive oil, for frying

Instructions:

  1. In a large mixing bowl, combine the ground chicken, shredded mozzarella cheese, grated Parmesan cheese, almond flour, minced garlic, onion powder, Italian seasoning, salt, pepper, and chopped parsley (if using). Mix until well combined.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Using your hands or a spoon, form the chicken mixture into small patties or fritters, about 2-3 inches in diameter.
  4. Place the chicken fritters in the heated skillet, making sure not to overcrowd the pan. Cook in batches if necessary.
  5. Cook the fritters for 4-5 minutes on each side, or until golden brown and cooked through. Make sure to cook them thoroughly, as chicken needs to reach an internal temperature of 165°F (74°C).
  6. Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.
  7. Serve the keto cheesy chicken fritters hot as a delicious low-carb appetizer, snack, or main dish.
  8. Optionally, serve with your favorite dipping sauce, such as sugar-free marinara sauce or ranch dressing.
