Keto Farmers casserole

Sure, here’s a modified version of the classic Farmer’s casserole, adjusted to be more keto-friendly:Ingredients:

  • 1 pound ground sausage (pork or turkey)
  • 1 cup bell peppers, diced (use a mix of colors for variety)
  • 1 cup mushrooms, sliced
  • 1 cup spinach, chopped
  • 8 large eggs
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or butter.
  2. In a skillet over medium heat, cook the ground sausage until browned and cooked through. Remove the sausage from the skillet and set it aside.
  3. In the same skillet, add the diced bell peppers and sliced mushrooms. Sauté until they start to soften, about 5 minutes. Add the chopped spinach and cook for an additional 1-2 minutes until wilted. Remove from heat.
  4. In a mixing bowl, whisk together the eggs and heavy cream. Season with salt and pepper to taste.
  5. Spread the cooked sausage evenly in the bottom of the greased baking dish.
  6. Layer the sautéed vegetables over the sausage.
  7. Pour the egg mixture evenly over the sausage and vegetables.
  8. Sprinkle the shredded cheddar cheese on top of the casserole.
  9. Bake in the preheated oven for about 25-30 minutes or until the eggs are set and the cheese is golden brown and bubbly.
  10. Once done, remove the casserole from the oven and let it cool for a few minutes before slicing.
  11. Garnish with chopped green onions if desired before serving.

This keto-friendly Farmer’s casserole is loaded with flavorful ingredients and makes for a hearty breakfast or brunch option while keeping the carb count low.
