Lamb chops can be a delightful and elegant dish to prepare. Here’s a recipe for succulent and flavorful lamb chops with garlic and rosemary:

Garlic and Rosemary Lamb Chops

Ingredients:

  • 8 lamb chops, about 1 inch thick
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • Salt and freshly ground black pepper
  • Lemon wedges, for serving

Instructions:

  1. Marinate the Lamb Chops:
    • In a small bowl, combine the olive oil, minced garlic, chopped rosemary, salt, and pepper.
    • Rub the mixture evenly over both sides of the lamb chops.
    • Cover and refrigerate for at least 30 minutes, or up to overnight for more intense flavor.
  2. Prepare the Grill or Pan:
    • If using a grill, preheat it to medium-high heat.
    • If using a stovetop, heat a large skillet or grill pan over medium-high heat.
  3. Cook the Lamb Chops:
    • Remove the lamb chops from the marinade and let them come to room temperature for about 15 minutes.
    • Place the lamb chops on the grill or in the hot pan.
    • Cook for about 3-4 minutes per side for medium-rare, or adjust the cooking time according to your preferred doneness.
    • Use a meat thermometer to check the internal temperature: 145°F for medium-rare, 160°F for medium, and 170°F for well-done.
  4. Rest and Serve:
    • Transfer the cooked lamb chops to a plate and let them rest for 5 minutes to allow the juices to redistribute.
    • Serve with lemon wedges on the side.

Serving Suggestions:

  • Serve the lamb chops with roasted vegetables, mashed potatoes, or a fresh salad.
  • A side of mint jelly or chimichurri sauce can add a delightful touch.
