🍑 Lazy Man’s Peach Cobbler (a.k.a. Pie Cobbler)
📝 Ingredients:
-
1 cup all-purpose flour
-
1 cup granulated sugar
-
1 cup milk
-
1/2 cup (1 stick) butter, melted
-
1 tbsp baking powder
-
1/4 tsp salt
-
1 can (15–16 oz) sliced peaches in syrup (don’t drain)
-
1/2 tsp cinnamon (optional)
-
Vanilla ice cream or whipped cream (optional topping)
👩🍳 Instructions:
-
Preheat oven to 350°F (175°C).
-
Melt butter and pour it into a 9×9 inch or 9×13 inch baking dish (depending on how thick you want your cobbler).
-
In a bowl, mix together the flour, sugar, baking powder, salt, and milk until smooth — no need to overmix.
-
Pour the batter directly over the melted butter in the baking dish. Do not stir.
-
Spoon the peaches (with all the syrup!) evenly over the top of the batter. Still, do not stir. The batter will rise around the peaches while baking.
-
Sprinkle cinnamon on top, if desired.
-
Bake for 40–50 minutes or until golden brown and bubbly.
-
Let it cool slightly before serving. Great warm with vanilla ice cream or whipped cream.
🔄 Variations:
-
Fresh or frozen peaches? You can use ~2 cups sliced fresh or frozen peaches + 1/2 cup sugar and a bit of water to mimic the syrup.
-
Other fruit: Try it with berries, apples, or cherries!
-
Brown sugar topping: Sprinkle a little brown sugar on top before baking for a deeper caramelized crust.
Let me know if you want a small-batch version or one for a crowd!
