Leftover Mashed Potato Cheese Puffs

These leftover mashed potato cheese puffs are a delicious way to transform your leftovers into a tasty snack or side dish. They are crispy on the outside and creamy on the inside, perfect for any occasion.

Ingredients:

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/4 cup grated Parmesan cheese
  • 2 green onions, finely chopped
  • 1 egg
  • 1/4 cup flour
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)
  • Oil for frying (vegetable, canola, or your preferred oil)

Instructions:

  1. Prepare the Potato Mixture:
    • In a large bowl, combine the mashed potatoes, shredded cheese, grated Parmesan, green onions, egg, and flour.
    • Season with salt, pepper, garlic powder, and onion powder, if using.
    • Mix until all ingredients are well combined.
  2. Shape the Puffs:
    • Using your hands or a small cookie scoop, form the potato mixture into small balls or patties, about 1 to 2 inches in diameter.
  3. Heat the Oil:
    • In a large skillet, heat about 1/2 inch of oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of the potato mixture into it; if it sizzles and bubbles, the oil is ready.
  4. Fry the Puffs:
    • Carefully place the potato puffs in the hot oil, a few at a time, making sure not to overcrowd the skillet.
    • Fry until golden brown and crispy, about 2-3 minutes per side.
    • Use a slotted spoon to transfer the puffs to a paper towel-lined plate to drain excess oil.
  5. Serve:
    • Serve the mashed potato cheese puffs hot, with your favorite dipping sauce (like sour cream, ranch, or marinara).

Tips:

  • Baking Option: For a healthier alternative, you can bake the potato puffs. Preheat your oven to 400°F (200°C). Place the puffs on a baking sheet lined with parchment paper, lightly spray with cooking oil, and bake for 15-20 minutes, flipping halfway through, until golden and crispy.
  • Add-ins: Customize your potato puffs by adding cooked bacon bits, chopped herbs (like parsley or chives), or even a bit of hot sauce for some heat.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to retain crispiness.
