Lemon Zest Coconut Macaroons

Lemon zest coconut macaroons offer a delightful combination of citrusy flavor and chewy texture. Here’s a simple recipe to make them at home:

Ingredients:

  • 4 large egg whites
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • Zest of 1 lemon
  • 1/4 teaspoon salt
  • 3 cups sweetened shredded coconut

Instructions:

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, whisk together the egg whites, granulated sugar, vanilla extract, almond extract (if using), lemon zest, and salt until well combined and slightly frothy.
  3. Add the sweetened shredded coconut to the egg white mixture and stir until evenly combined and the coconut is thoroughly coated.
  4. Using a spoon or a cookie scoop, portion out small mounds of the coconut mixture onto the prepared baking sheet, leaving a little space between each macaroon.
  5. Bake in the preheated oven for 20-25 minutes, or until the edges of the macaroons are golden brown and the tops are lightly toasted.
  6. Remove the baking sheet from the oven and let the macaroons cool on the baking sheet for a few minutes.
  7. Transfer the macaroons to a wire rack to cool completely. They will firm up as they cool.
  8. Once cooled, your lemon zest coconut macaroons are ready to enjoy! Store them in an airtight container at room temperature for up to a week.
