Here’s a scrumptious recipe for Loaded Baked Potato Salad that’s perfect for potlucks, BBQs, or as a hearty side dish:

Loaded Baked Potato Salad

Ingredients

  • 4 large russet potatoes
  • 6 slices of bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped fresh chives or green onions
  • 1/4 cup chopped fresh parsley (optional)
  • Salt and black pepper, to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Prepare the Potatoes:
    • Peel the potatoes (if desired) and cut them into bite-sized cubes.
    • Place the potatoes in a large pot and cover with cold water. Add a pinch of salt.
    • Bring the water to a boil over high heat. Reduce the heat to medium and cook until the potatoes are tender but still firm, about 10-12 minutes.
    • Drain the potatoes and let them cool completely.
  2. Prepare the Dressing:
    • In a large bowl, mix together the sour cream, mayonnaise, garlic powder, onion powder, salt, and black pepper. Adjust seasoning to taste.
  3. Combine the Salad:
    • Once the potatoes have cooled, transfer them to the bowl with the dressing. Gently toss to coat the potatoes evenly.
    • Fold in the shredded cheddar cheese, crumbled bacon, and chopped chives or green onions.
  4. Chill and Serve:
    • Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld and the salad to chill.
    • Garnish with additional chopped chives or parsley before serving if desired.

This Loaded Baked Potato Salad is creamy, cheesy, and full of flavor, making it a crowd-pleaser at any gathering!
