Loaded cheesy pocket tacos sound absolutely delicious! Here’s a recipe to make these flavorful treats:Ingredients:

  • 1 pound ground beef (or any preferred protein like chicken or turkey)
  • 1 packet taco seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup diced green onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced black olives (optional)
  • 8-10 flour tortillas (soft taco size)
  • Cooking spray or oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until it’s browned and cooked through. Drain any excess grease.
  3. Add the taco seasoning mix to the cooked beef according to the package instructions. Mix well and simmer for a few minutes. Set aside.
  4. In a mixing bowl, combine the shredded cheddar and mozzarella cheese, diced tomatoes, green onions, cilantro, and sliced black olives if using. Mix everything together to create the cheesy filling.
  5. Take a flour tortilla and place a generous amount of the cheesy filling on one half of the tortilla, leaving some space around the edges.
  6. Add a spoonful of the cooked taco-seasoned beef on top of the cheese mixture.
  7. Fold the tortilla over to create a pocket and press the edges firmly to seal. You can use a fork to crimp the edges for a secure seal.
  8. Repeat the process with the remaining tortillas and fillings.
  9. Place the filled pocket tacos on a baking sheet lined with parchment paper or lightly greased.
  10. Lightly spray or brush the tops of the pocket tacos with cooking spray or oil to help them turn golden brown in the oven.
  11. Bake in the preheated oven for about 15-20 minutes or until the pockets are crispy and golden.
  12. Remove from the oven and allow them to cool slightly before serving.

These loaded cheesy pocket tacos are perfect for a party or a fun dinner. You can serve them with your favorite dipping sauces or enjoy them as they are!
