Low-Carb Bacon Cheeseburger Casserole recipe

Here’s a delicious Low-Carb Bacon Cheeseburger Casserole recipe, perfect for keto and low-carb diets. It combines all the flavors of a bacon cheeseburger without the bun!

Ingredients:

  • 1 lb ground beef (80/20 or leaner)
  • 6 slices bacon, cooked and crumbled
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup mayonnaise
  • 1 tbsp mustard
  • 1 tbsp ketchup (sugar-free for keto)
  • Salt and pepper to taste
  • Optional: pickles, tomatoes, lettuce (for serving)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish or casserole dish.
  2. Cook the beef: In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat and set aside.
  3. Cook the onion and garlic: In the same skillet, sauté the onion and garlic until soft and translucent, about 2-3 minutes. Add the cooked onion and garlic to the beef.
  4. Prepare the casserole: Spread the cooked beef and onion mixture evenly in the greased baking dish. Sprinkle the crumbled bacon on top, followed by the shredded cheddar cheese.
  5. Mix the egg mixture: In a medium bowl, whisk together the eggs, heavy cream, mayonnaise, mustard, and ketchup. Season with salt and pepper.
  6. Assemble and bake: Pour the egg mixture evenly over the beef, bacon, and cheese in the casserole dish. Bake for 30-35 minutes, or until the top is set and lightly golden.
  7. Serve: Allow the casserole to cool for a few minutes before slicing. Garnish with optional toppings like pickles, tomatoes, or lettuce for that true cheeseburger feel.
