Meat vegetable soup is a hearty and nutritious dish that combines tender chunks of meat with a variety of vegetables, simmered in a flavorful broth. Here’s a basic recipe for making meat vegetable soup:

Ingredients:

  • 1 lb (450g) stewing beef, cubed (you can also use chicken, turkey, or any other meat of your choice)
  • 1 onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 6 cups (1.5 liters) beef or vegetable broth
  • 1 can (14.5 oz / 400g) diced tomatoes, undrained
  • 1 cup (150g) frozen peas
  • 1 cup (150g) frozen corn kernels
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Brown the Meat:
    • Heat a large soup pot or Dutch oven over medium heat. Add a drizzle of olive oil.
    • Add the cubed stewing beef to the pot and season with salt and pepper. Cook until browned on all sides. Remove the beef from the pot and set aside.
  2. Sauté the Vegetables:
    • In the same pot, add the chopped onion, carrots, and celery. Sauté for 5-7 minutes, or until the vegetables begin to soften.
    • Add the minced garlic and sauté for another minute, until fragrant.
  3. Add the Broth and Tomatoes:
    • Return the browned beef to the pot.
    • Pour in the beef or vegetable broth and diced tomatoes with their juices. Stir to combine.
  4. Simmer the Soup:
    • Bring the soup to a simmer over medium heat. Once simmering, reduce the heat to low and cover the pot. Let the soup simmer for about 30-40 minutes, stirring occasionally, until the beef is tender and the vegetables are cooked through.
  5. Add the Potatoes and Herbs:
    • Add the diced potatoes, dried thyme, and dried rosemary to the soup. Stir well.
    • Continue to simmer the soup for another 15-20 minutes, or until the potatoes are fork-tender.
  6. Add the Frozen Vegetables:
    • Stir in the frozen peas and corn kernels. Simmer for an additional 5-10 minutes, until the frozen vegetables are heated through.
  7. Adjust Seasoning and Serve:
    • Taste the soup and adjust the seasoning with salt and pepper, if needed.
    • Ladle the hot meat vegetable soup into bowls. Garnish with chopped fresh parsley, if desired.
    • Serve the soup hot, with crusty bread or crackers on the side.
