Ingredients:

  • 2 cups shredded Velveeta cheese (or Mexican blend cheese)
  • 1 cup heavy cream (or whole milk for a lighter version)
  • 1/2 cup salsa (mild, medium, or hot, depending on your preference)
  • 1 tablespoon butter (optional, for extra richness)
  • 1/4 teaspoon garlic powder (optional, for flavor)
  • 1/4 teaspoon cumin (optional, for a warm, earthy flavor)
  • 1-2 tablespoons chopped fresh cilantro (optional, for garnish)
  • Jalapeños (optional, for extra spice – can use pickled jalapeños or fresh, chopped)

Instructions:

1. Melt the Cheese:

  • In a medium saucepan over medium heat, melt the butter (if using). Then, add the heavy cream and stir well until it starts to warm up (about 1-2 minutes).
  • Gradually add the Velveeta cheese (or shredded Mexican blend cheese), stirring frequently until the cheese is completely melted and smooth.

2. Add Flavoring:

  • Stir in the salsa and mix until well combined. The salsa will add flavor and a little chunkiness to the dip.
  • Add garlic powder and cumin if you want a boost of flavor. You can also add chopped jalapeños for some extra heat (if you like it spicy).

3. Simmer:

  • Lower the heat and let the dip simmer for about 3-5 minutes, stirring occasionally. Make sure it doesn’t boil, as that could cause the cheese to separate or become grainy.
  • If the dip becomes too thick, you can add a splash more of heavy cream or milk to reach your desired consistency.

4. Garnish and Serve:

  • Once your cheese dip is smooth and creamy, transfer it to a serving dish. Garnish with freshly chopped cilantro (if using).

  • Add extra heat: If you like your dip spicy, add more jalapeños, some hot sauce, or a few dashes of chili powder to kick up the flavor.
  • Make it extra cheesy: For a thicker, richer dip, use more cheese or a combination of cheeses like cheddar, Monterey Jack, and even pepper jack.
  • Slow cooker option: You can also make this dip in a slow cooker. Just melt everything together on the stovetop first and then transfer it to the slow cooker on the low setting to keep warm.
