Ah, the Mile High Lemon Pound Cake—a rich, dense, sky-high Southern classic bursting with lemon flavor and buttery goodness. It’s the kind of cake that doesn’t just sit on a plate—it commands attention. Here’s how to make a proper one:


🍋 Mile High Lemon Pound Cake Recipe

Yields: One large Bundt or tube pan (10–12 servings)


🛒 Ingredients:

Cake:

  • 3 sticks (1 1/2 cups) unsalted butter, softened

  • 2 1/2 cups granulated sugar

  • 6 large eggs, room temperature

  • 3 cups cake flour (sifted)

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup whole milk

  • 1/4 cup fresh lemon juice

  • 1 tbsp lemon zest (about 2 lemons)

  • 1 tsp pure vanilla extract

  • 1/2 tsp lemon extract (optional but recommended for boost)

Lemon Glaze (optional but amazing):

  • 1 cup powdered sugar, sifted

  • 2–3 tbsp lemon juice

  • Zest of 1 lemon (optional, for garnish)


🧁 Instructions:

1. Preheat oven to 325°F (163°C). Grease and flour a large Bundt or tube pan thoroughly.

2. Cream butter and sugar:

  • In a stand mixer (or with hand mixer), beat butter on medium until creamy (~1 min).

  • Gradually add sugar and beat until light and fluffy—at least 4–5 minutes. Don’t rush this!

3. Add eggs:

  • Add eggs one at a time, beating well after each addition.

4. Sift dry ingredients:

  • Combine cake flour, baking powder, and salt in a bowl.

5. Mix wet ingredients:

  • In a separate bowl or measuring cup, combine milk, lemon juice, zest, vanilla, and lemon extract.

6. Combine everything:

  • Alternate adding dry ingredients and milk mixture to the butter mixture (start and end with flour). Mix just until combined—don’t overmix.

7. Pour into pan:

  • Spread batter evenly into the prepared pan. Tap on the counter a few times to release air bubbles.

8. Bake:

  • Bake for 1 hour 10 minutes to 1 hour 25 minutes, or until a toothpick inserted in the center comes out clean.

  • Let cool in the pan for 15 minutes, then invert onto a rack to cool completely.


🍋 Lemon Glaze:

Mix lemon juice into powdered sugar until you get a thick but pourable glaze. Drizzle over cooled cake and top with lemon zest if desired.

  • Room temp ingredients = better rise and texture.

  • Don’t open the oven early—it needs the full time to rise tall and proud.
