🍋 Mile High Lemon Pound Cake Recipe
Yields: One large Bundt or tube pan (10–12 servings)
🛒 Ingredients:
Cake:
-
3 sticks (1 1/2 cups) unsalted butter, softened
-
2 1/2 cups granulated sugar
-
6 large eggs, room temperature
-
3 cups cake flour (sifted)
-
1/2 tsp baking powder
-
1/2 tsp salt
-
1 cup whole milk
-
1/4 cup fresh lemon juice
-
1 tbsp lemon zest (about 2 lemons)
-
1 tsp pure vanilla extract
-
1/2 tsp lemon extract (optional but recommended for boost)
Lemon Glaze (optional but amazing):
-
1 cup powdered sugar, sifted
-
2–3 tbsp lemon juice
-
Zest of 1 lemon (optional, for garnish)
🧁 Instructions:
1. Preheat oven to 325°F (163°C). Grease and flour a large Bundt or tube pan thoroughly.
2. Cream butter and sugar:
-
In a stand mixer (or with hand mixer), beat butter on medium until creamy (~1 min).
-
Gradually add sugar and beat until light and fluffy—at least 4–5 minutes. Don’t rush this!
3. Add eggs:
-
Add eggs one at a time, beating well after each addition.
4. Sift dry ingredients:
-
Combine cake flour, baking powder, and salt in a bowl.
5. Mix wet ingredients:
-
In a separate bowl or measuring cup, combine milk, lemon juice, zest, vanilla, and lemon extract.
6. Combine everything:
-
Alternate adding dry ingredients and milk mixture to the butter mixture (start and end with flour). Mix just until combined—don’t overmix.
7. Pour into pan:
-
Spread batter evenly into the prepared pan. Tap on the counter a few times to release air bubbles.
8. Bake:
-
Bake for 1 hour 10 minutes to 1 hour 25 minutes, or until a toothpick inserted in the center comes out clean.
-
Let cool in the pan for 15 minutes, then invert onto a rack to cool completely.
🍋 Lemon Glaze:
Mix lemon juice into powdered sugar until you get a thick but pourable glaze. Drizzle over cooled cake and top with lemon zest if desired.
✅ Tips for Mile-High Success:
-
Room temp ingredients = better rise and texture.
-
Don’t open the oven early—it needs the full time to rise tall and proud.
-
Use cake flour for the signature tender crumb (AP flour works, but results will be denser).
-
Try it toasted with a little butter for a next-day treat.
