MILK BRIOCHE ROLLS

Posted on January 23, 2024

Milk brioche rolls are soft, buttery, and perfect for breakfast or as a sweet treat. Here’s a recipe to make delicious milk brioche rolls:

Ingredients:

For the Brioche Dough:

  • 1/2 cup warm milk (about 110°F or 43°C)
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1/4 cup granulated sugar
  • 3 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/2 cup unsalted butter, softened

For the Egg Wash:

  • 1 egg, beaten
  • 1 tablespoon milk

For Glazing (Optional):

  • 2 tablespoons apricot preserves or honey (warmed)

Instructions:

1. Activate the Yeast:

  • In a bowl, combine warm milk and sugar. Sprinkle the active dry yeast over the milk and let it sit for about 5-10 minutes, or until it becomes frothy.

2. Make the Dough:

  • In a large mixing bowl, combine the flour and salt. Make a well in the center and add the activated yeast mixture, eggs, and softened butter. Mix until the dough comes together.
  • Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic. Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.

3. Shape the Rolls:

  • Punch down the risen dough and divide it into equal portions to form rolls. You can make approximately 12 rolls depending on the size you prefer.
  • Place the rolls in a greased baking dish, leaving a little space between each.

4. Second Rise:

  • Cover the rolls with a damp cloth and let them rise for an additional 1-1.5 hours, or until they double in size again.

5. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

6. Egg Wash:

  • In a small bowl, beat one egg with a tablespoon of milk. Brush the egg wash over the tops of the rolls.

7. Bake:

  • Bake the rolls in the preheated oven for 15-20 minutes, or until they are golden brown on top and sound hollow when tapped.

8. Glaze (Optional):

  • If desired, warm apricot preserves or honey and brush it over the warm rolls for a shiny glaze.

9. Cool and Enjoy:

  • Allow the milk brioche rolls to cool slightly before serving. Enjoy them warm with butter or your favorite jam.

These milk brioche rolls are sure to be a hit at breakfast or brunch. The rich and tender texture, along with the buttery flavor, makes them a delightful treat.
