Milk Flatbreads with Cheese and Herbs are a quick and delicious snack or side dish, perfect for pairing with soups, salads, or just enjoying on their own. These flatbreads are soft, flavorful, and can be made in a frying pan for a quick preparation.

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup milk (warm)
  • 2 tablespoons unsalted butter, melted
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 2 tablespoons fresh herbs (such as parsley, dill, or chives), finely chopped
  • 1 tablespoon olive oil or butter (for frying)

Instructions:

1. Prepare the Dough:

  • In a large mixing bowl, combine the flour, salt, baking powder, and baking soda.
  • Gradually add the warm milk and melted butter to the dry ingredients. Mix until a soft dough forms.
  • Knead the dough on a lightly floured surface for about 3-5 minutes until smooth and elastic.
  • Cover the dough with a clean towel and let it rest for about 10 minutes.

2. Prepare the Filling:

  • In a small bowl, mix the shredded cheese and chopped herbs together. Set aside.

3. Shape the Flatbreads:

  • Divide the dough into 6-8 equal portions and roll each portion into a ball.
  • On a lightly floured surface, roll out each dough ball into a small circle, about 1/4-inch thick.
  • Sprinkle a generous amount of the cheese and herb mixture onto one half of the rolled-out dough.
  • Fold the other half over the filling to create a semi-circle. Press the edges together to seal the flatbread.
  • Gently roll out the filled flatbread to flatten it slightly, being careful not to let the filling escape.

4. Cook the Flatbreads:

  • Heat a non-stick frying pan over medium heat and add a little olive oil or butter.
  • Place the flatbread in the hot pan and cook for about 2-3 minutes on each side, or until golden brown and cooked through.
  • Repeat with the remaining flatbreads, adding more oil or butter to the pan as needed.

5. Serve:

  • Serve the flatbreads warm, either plain or with a side of dipping sauce like yogurt or sour cream.

Tips:

  • Herb Variations: You can use any herbs you like, or even add a pinch of garlic powder or chili flakes for extra flavor.
  • Cheese Choice: Feel free to experiment with different cheeses, or even mix a few together for a richer flavor.
  • Make Ahead: You can prepare the dough and filling ahead of time and store them separately in the fridge. Assemble and cook the flatbreads just before serving.
