Minister’s Delight

Ingredients:

  • For the crust:

    • 1 1/2 cups graham cracker crumbs
    • 1/2 cup melted butter
    • 1/4 cup sugar
  • For the cream cheese layer:

    • 8 oz cream cheese, softened
    • 1/4 cup powdered sugar
    • 1 cup whipped topping (like Cool Whip)
  • For the pudding layer:

    • 2 (3.4 oz) boxes instant vanilla pudding mix
    • 3 cups milk
  • For the topping:

    • 1 cup whipped topping (like Cool Whip)
    • 1 tablespoon cocoa powder or shaved chocolate for garnish (optional)

Instructions:

  1. Prepare the Crust:

    • Preheat the oven to 350°F (175°C).
    • In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until all the crumbs are moistened.
    • Press the mixture firmly into the bottom of a 9×13-inch baking dish to form the crust.
    • Bake for 8-10 minutes or until golden brown. Allow it to cool completely while you prepare the next layers.
  2. Cream Cheese Layer:

    • In a medium bowl, beat together the softened cream cheese and powdered sugar until smooth and creamy.
    • Fold in 1 cup whipped topping. Spread this mixture evenly over the cooled graham cracker crust.
  3. Pudding Layer:

    • In another bowl, whisk together the instant vanilla pudding mix and 3 cups of milk. Whisk for about 2 minutes, until the pudding thickens.
    • Spread the pudding mixture evenly over the cream cheese layer. Smooth out the top.
  4. Topping:

    • Spread the remaining 1 cup of whipped topping over the pudding layer to create a nice, smooth layer.
    • If desired, sprinkle cocoa powder or shaved chocolate over the whipped topping for an extra touch of flavor and decoration.
  5. Chill and Serve:

    • Refrigerate the dessert for at least 4 hours or overnight to allow it to set and the layers to firm up.
    • Once chilled, cut into squares and serve!

Serving Suggestions:

  • Garnish with a few extra chocolate shavings or fresh berries like strawberries or raspberries for added color and flavor.
  • This dessert is rich, so serve it in small portions!

Minister’s Delight is a layered, creamy dessert that’s perfect for any occasion. It’s simple to prepare and offers a delicious contrast between the crisp crust, creamy layers, and rich pudding. Enjoy!
