Mississippi Mud Potatoes

Here’s a delicious and indulgent recipe for Mississippi Mud Potatoes. These creamy, cheesy, and bacon-filled potatoes are the perfect comfort food, great as a side dish or even a main course.

Mississippi Mud Potatoes

Ingredients

  • 4 large russet potatoes, peeled and cubed
  • 6 slices bacon, cooked and crumbled
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 tablespoons butter, melted
  • Additional shredded cheddar cheese (for topping)
  • Additional chopped green onions (for garnish)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish or a large cast iron skillet.
  2. Prepare the Potatoes:
    • Place the cubed potatoes in a large pot and cover with water. Bring to a boil over high heat, then reduce the heat to medium and simmer until the potatoes are just tender, about 10-12 minutes. Drain the potatoes and set aside.
  3. Mix the Ingredients:
    • In a large mixing bowl, combine the sour cream, mayonnaise, shredded cheddar cheese, shredded mozzarella cheese, chopped green onions, minced garlic, paprika, salt, and black pepper. Stir until well combined.
  4. Combine Potatoes and Mixture:
    • Gently fold the cooked potatoes and crumbled bacon into the mixture until the potatoes are well coated. Be careful not to mash the potatoes.
  5. Bake the Potatoes:
    • Transfer the potato mixture to the prepared baking dish. Drizzle the melted butter over the top. Sprinkle with additional shredded cheddar cheese.
  6. Bake:
    • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the top is lightly golden.
  7. Garnish and Serve:
    • Remove from the oven and let cool slightly. Garnish with additional chopped green onions before serving.
