Here’s a delicious Moist Banana Bread recipe that’s easy to make and perfect for using up overripe bananas. This recipe produces a soft, fluffy, and flavorful loaf that everyone will love!

Moist Banana Bread

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional, for extra flavor)
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 4 ripe bananas, mashed (about 1 1/2 cups)
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or substitute with regular milk)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix the Dry Ingredients:

    • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using). Set aside.
  3. Cream the Butter and Sugar:

    • In a large mixing bowl, beat together the butter and sugar until light and fluffy, about 2-3 minutes.
  4. Add Eggs and Bananas:

    • Add the eggs, one at a time, beating well after each addition.
    • Stir in the mashed bananas and vanilla extract.
  5. Combine Wet and Dry Ingredients:

    • Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing until just combined. Be careful not to overmix.
  6. Add Optional Mix-ins:

    • If using, fold in the chopped walnuts or chocolate chips.
  7. Bake:

    • Pour the batter into the prepared loaf pan and smooth the top.
    • Bake for 60-70 minutes, or until a toothpick or cake tester inserted into the center comes out clean or with just a few crumbs. If the top starts to brown too quickly, tent the loaf with aluminum foil and continue baking.
  8. Cool and Serve:

    • Let the banana bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Tips for Extra Moist Banana Bread:

  • Use very ripe bananas for the best flavor and moisture. The more brown spots, the better!
  • Don’t overmix the batter; mix until just combined to avoid a dense loaf.
  • If you prefer a slightly denser bread, you can replace half of the all-purpose flour with whole wheat flour for added texture and flavor.
