Moist Chocolate Loaf Cake

A Moist Chocolate Loaf Cake sounds perfect for any occasion! Here’s a simple recipe that results in a rich, tender, and incredibly moist cake. Let’s get baking!

Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder (preferably Dutch-process)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup buttermilk, at room temperature
  • ¼ cup vegetable oil (or melted butter)
  • ½ cup boiling water
  • ½ cup sour cream or Greek yogurt (for extra moisture)
  • ½ cup semi-sweet chocolate chips (optional, but adds great texture!)

Directions:

1. Preheat the oven:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9×5-inch loaf pan, or line it with parchment paper for easy removal.

2. Mix the dry ingredients:

  • In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.

3. Cream the wet ingredients:

  • In a large mixing bowl, beat together the sugar, eggs, and vanilla extract until smooth and slightly fluffy, about 2 minutes.
  • Add the oil (or melted butter) and sour cream (or yogurt) and continue mixing until combined.

4. Combine the dry and wet ingredients:

  • Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients.
  • Mix until just combined—be careful not to overmix!

5. Add the boiling water:

  • Stir in the boiling water. The batter will be thin, but that’s exactly how it should be for a super moist loaf cake.

6. Add chocolate chips (optional):

  • If you’re using chocolate chips, fold them into the batter gently.

7. Bake the cake:

  • Pour the batter into your prepared loaf pan.
  • Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean (or with a few moist crumbs, but no wet batter).

8. Cool:

  • Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Optional Glaze (for extra indulgence!):

  • ½ cup heavy cream
  • ½ cup semi-sweet chocolate chips
  1. Heat the heavy cream in a small saucepan until it just starts to simmer.
  2. Remove from heat and stir in the chocolate chips until melted and smooth.
  3. Drizzle the glaze over the cooled cake and let it set before slicing.

Serve & Enjoy!

Slice the cake and enjoy the moist, rich chocolate goodness! It’s perfect with a cup of coffee or tea. You can even top it with a scoop of vanilla ice cream if you want to make it extra decadent.
