Here’s a delicious recipe for Mozzarella Mushroom White Wine Chicken. This dish features tender chicken breasts smothered in a creamy mushroom and white wine sauce, topped with melted mozzarella cheese. It’s a perfect meal for a special occasion or a cozy night in.

Mozzarella Mushroom White Wine Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 8 oz (225 g) mushrooms, sliced
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken:
    • Season the chicken breasts on both sides with salt and black pepper.
  2. Cook the Chicken:
    • In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Cook the Onions and Garlic:
    • In the same skillet, add the butter. Once melted, add the chopped onion and cook until it becomes translucent, about 3-4 minutes. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
  4. Cook the Mushrooms:
    • Add the sliced mushrooms to the skillet and cook for about 5-7 minutes, or until they are soft and have released their moisture.
  5. Deglaze the Skillet:
    • Pour in the white wine, stirring to scrape up any browned bits from the bottom of the skillet. Cook for about 2-3 minutes, or until the wine has reduced by half.
  6. Make the Sauce:
    • Add the chicken broth, heavy cream, dried thyme, and dried oregano to the skillet. Stir well to combine. Bring the mixture to a simmer and cook for about 5-7 minutes, or until the sauce has thickened slightly.
  7. Combine Chicken and Sauce:
    • Return the cooked chicken breasts to the skillet, spooning some of the sauce over the top. Reduce the heat to low and let the chicken simmer in the sauce for about 5 minutes to absorb the flavors.
  8. Add Mozzarella:
    • Sprinkle the shredded mozzarella cheese over the chicken breasts. Cover the skillet with a lid and cook for another 2-3 minutes, or until the cheese is melted and bubbly.
  9. Serve:
    • Garnish with freshly chopped parsley and serve immediately. This dish pairs well with pasta, rice, or a side of steamed vegetables.
