Mulligan stew is a hearty and comforting soup that originated in North America. It’s a dish that’s often associated with using whatever ingredients are available, making it a versatile and flexible recipe. Here’s a basic recipe to make Mulligan stew soup:

Ingredients:

  • 1 lb stew meat (beef, lamb, or pork), cut into bite-sized pieces
  • 2 tablespoons olive oil or vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 potatoes, peeled and diced
  • 2 celery stalks, chopped
  • 4 cups beef or vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup frozen peas
  • Salt and pepper, to taste
  • Herbs and spices of your choice (such as thyme, rosemary, or bay leaves)
  • Optional: Worcestershire sauce or soy sauce, for extra flavor

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the stew meat and brown it on all sides, about 5-7 minutes. Remove the meat from the pot and set it aside.
  2. In the same pot, add the chopped onion and garlic. Cook until the onions are translucent and fragrant, about 3-4 minutes.
  3. Add the diced carrots, potatoes, and celery to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Return the browned stew meat to the pot. Pour in the beef or vegetable broth and diced tomatoes with their juices. Add any herbs and spices you like, such as thyme, rosemary, or bay leaves. Season with salt and pepper to taste.
  5. Bring the stew to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for about 1 to 1.5 hours, or until the meat is tender and the vegetables are cooked through.
  6. Add the frozen peas to the stew during the last 10 minutes of cooking.
  7. Taste the stew and adjust the seasoning if necessary. If you like, you can add a splash of Worcestershire sauce or soy sauce for extra flavor.
  8. Once the stew is ready, remove any bay leaves and serve hot.
  9. Enjoy your homemade Mulligan stew soup with crusty bread or biscuits for a comforting and satisfying meal.
