Mushroom Swiss Cheese Meatloaf Recipe

Ingredients:

For the meatloaf:

  • 1 lb ground beef (you can also use ground turkey or a mix of beef and pork)
  • 1/2 cup breadcrumbs (or crushed crackers)
  • 1/4 cup milk
  • 1 large egg
  • 1 small onion, finely chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup (for added moisture)
  • 1 tbsp olive oil (for cooking mushrooms)

For the filling:

  • 1 cup mushrooms, finely chopped (white or cremini mushrooms work well)
  • 1 cup Swiss cheese, shredded
  • 1/4 cup fresh parsley, chopped (optional, for garnish)

For the topping:

  • 2 tbsp ketchup or barbecue sauce (optional, for glazing)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper for easy removal.
  2. Cook the Mushrooms:
    • In a skillet, heat the olive oil over medium heat. Add the chopped mushrooms and cook, stirring occasionally, until the mushrooms release their moisture and become tender, about 5-7 minutes. Remove from heat and allow them to cool slightly.
  3. Prepare the Meatloaf Mixture:
    • In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, garlic powder, thyme, salt, pepper, Worcestershire sauce, and ketchup. Mix until just combined—be careful not to overmix, as that can result in a tough meatloaf.
  4. Stuff the Meatloaf:
    • Take half of the meat mixture and press it into the bottom of the loaf pan to form the base of the meatloaf.
    • Spread the cooked mushrooms evenly over the meat layer, then sprinkle the shredded Swiss cheese on top of the mushrooms.
    • Add the remaining meat mixture on top, pressing it down gently to seal the filling inside.
  5. Add the Topping:
    • If you like, spread a thin layer of ketchup or barbecue sauce over the top of the meatloaf for added flavor and a nice glossy finish.
  6. Bake:
    • Place the meatloaf in the oven and bake for about 45-55 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C) and is cooked through.
    • For extra browning, you can broil the meatloaf for the last 2-3 minutes.
  7. Serve:
    • Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This allows the juices to redistribute and makes it easier to cut.
  8. Garnish and Enjoy:
    • Garnish with freshly chopped parsley, if desired, and serve with your favorite sides, such as mashed potatoes, roasted vegetables, or a side salad.

Tips:

  • For extra flavor: You can sauté the onions with the mushrooms for an extra layer of flavor before adding them to the meatloaf.
  • Customize the cheese: If you love cheese, feel free to add more Swiss cheese or try mixing in other types like cheddar or mozzarella for variation.
  • Make-ahead: You can prepare the meatloaf the night before, refrigerate it, and bake it the next day. Just let it rest at room temperature for a few minutes before baking.
