No-Bake Chocolate Eclair Cake

This easy no-bake chocolate eclair cake is a crowd-pleaser that combines layers of graham crackers, creamy vanilla pudding, and a rich chocolate frosting. It’s perfect for any occasion and requires minimal effort.

Ingredients:

  • For the Cake:
    • 2 (3.5 oz) packages instant vanilla pudding mix
    • 3 cups milk
    • 1 (8 oz) container whipped topping (like Cool Whip), thawed
    • 1 box graham crackers
  • For the Chocolate Frosting:
    • 1/3 cup unsweetened cocoa powder
    • 1 cup granulated sugar
    • 1/4 cup milk
    • 1/2 cup unsalted butter
    • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Pudding Mixture:
    • In a large bowl, whisk together the instant vanilla pudding mix and milk until thickened, about 2 minutes.
    • Fold in the thawed whipped topping until well combined.
  2. Assemble the Cake:
    • In the bottom of a 9×13-inch baking dish, arrange a single layer of graham crackers, breaking them as needed to fit.
    • Spread half of the pudding mixture over the graham crackers.
    • Add another layer of graham crackers on top of the pudding mixture.
    • Spread the remaining pudding mixture over the second layer of graham crackers.
    • Top with a final layer of graham crackers.
  3. Prepare the Chocolate Frosting:
    • In a medium saucepan, combine the cocoa powder, granulated sugar, and milk.
    • Cook over medium heat, stirring constantly, until the mixture comes to a boil.
    • Allow the mixture to boil for 1 minute, then remove from heat.
    • Add the butter and vanilla extract, stirring until the butter is melted and the mixture is smooth.
  4. Add the Frosting:
    • Pour the warm chocolate frosting over the top layer of graham crackers, spreading it evenly with a spatula.
  5. Chill the Cake:
    • Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the graham crackers to soften and the flavors to meld.
  6. Serve:
    • Slice and serve the no-bake chocolate eclair cake chilled.

Tips:

  • Make Ahead: This cake can be made a day in advance and stored in the refrigerator until ready to serve.
  • Variations: Try using chocolate or banana pudding mix instead of vanilla for a different flavor.
  • Garnish: Add a sprinkle of crushed graham crackers or chocolate shavings on top for extra decoration.
