🥥 No-Bake Pecan Coconut Praline Cookies
🕒 Prep Time: 10 min | Cook Time: 10 min | Chill Time: 30–45 min | Makes: ~24 cookies
🧾 Ingredients:
-
1½ cups granulated sugar
-
¾ cup brown sugar (light or dark)
-
½ cup whole milk (or evaporated milk for richness)
-
½ cup unsalted butter (1 stick)
-
1 tsp vanilla extract
-
2 cups sweetened shredded coconut
-
1½ cups chopped pecans
-
Pinch of salt
👩🍳 Instructions:
1. Prepare tray:
Line a baking sheet with parchment paper or wax paper and set aside.
2. Cook the base:
In a medium saucepan over medium heat, combine granulated sugar, brown sugar, milk, and butter. Stir constantly and bring to a gentle boil.
3. Boil and thicken:
Boil for 3–4 minutes, stirring often, until slightly thickened and sugar is dissolved. Remove from heat.
4. Add flavor and texture:
Quickly stir in vanilla, shredded coconut, chopped pecans, and a pinch of salt. Mix well to fully coat everything.
5. Scoop and shape:
Drop spoonfuls (about 1½ tbsp) of the mixture onto the prepared sheet. Flatten slightly if desired.
6. Cool and set:
Let the cookies cool at room temperature for 30–45 minutes until firm. You can speed this up by chilling them in the fridge.
✅ Tips:
-
Store in an airtight container at room temperature for 3 days, or refrigerate for up to a week.
-
Use toasted coconut or pecans for deeper flavor.
-
Want a chocolate twist? Add ½ cup mini chocolate chips after the mixture cools slightly (but not too hot, or they’ll melt completely).
