Pancakes with sugar and lemon is a classic and delightful combination that’s easy to make. Here’s a simple recipe for delicious pancakes with sugar and lemon:

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1/4 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • Zest of one lemon
  • Butter or cooking spray for the pan

Toppings:

  • Powdered sugar
  • Lemon wedges

Instructions:

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the buttermilk, milk, egg, melted butter, and lemon zest.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix; it’s okay if there are a few lumps.
  4. Heat a griddle or non-stick pan over medium heat. Add a small amount of butter or cooking spray to coat the surface.
  5. Pour 1/4 cup portions of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
  6. Remove the pancakes from the griddle and repeat until all the batter is used.
  7. Serve the pancakes warm, topped with a sprinkle of powdered sugar and a drizzle of fresh lemon juice.
  8. Optionally, you can add extra slices of lemon as a garnish.

These pancakes are fluffy and flavorful with the combination of sugar and lemon. They make for a delightful breakfast or brunch treat. Enjoy!
