Ingredients:
For the Ripe Plantains:
- 4 ripe plantains (yellow or black, not green)

- 1 small onion, finely chopped
- 1 bell pepper, finely chopped

- 1/2 cup tomato sauce
- 1/4 cup pimento-stuffed olives, sliced

- 1 1/2 cups shredded mozzarella or cheddar cheese
Instructions:
- Start by preparing the ripe plantains. Peel the plantains and slice them lengthwise into thin strips or use a mandoline slicer. Heat the vegetable oil in a frying pan over medium-high heat. Fry the plantain slices until they’re golden brown on both sides, then remove them and place them on paper towels to drain. Sprinkle with a little salt.
- In a separate skillet, heat some oil over medium heat and sauté the chopped onion, bell pepper, and garlic until they are softened.
- Add the ground meat (beef or your choice of meat) to the skillet and cook until browned, breaking it into small pieces as it cooks.
- Stir in the Sazón seasoning (if using), cumin, oregano, salt, and black pepper.
- Add the tomato sauce and cook for a few minutes until the mixture thickens slightly.
- Add the sliced olives and raisins (if using) and cook for an additional minute.
- Preheat your oven to 350°F (175°C).
- In a baking dish, start assembling the pastelón. Place a layer of fried plantains on the bottom of the dish. Spread half of the meat mixture over the plantains. Add a layer of shredded cheese. Repeat with another layer of plantains, the remaining meat mixture, and another layer of cheese on top.
- Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
