Peach salad is a delicious and refreshing dish that combines the sweetness of ripe peaches with savory and fresh ingredients. Here’s a basic recipe for making a simple peach salad:

Ingredients:

For the Salad:

  • 4 ripe peaches, pitted and sliced
  • 4 cups mixed greens (such as baby spinach, arugula, or spring mix)
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup chopped toasted pecans or walnuts
  • Fresh basil leaves, for garnish (optional)

For the Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and black pepper to taste

Instructions:

  1. In a small bowl, whisk together the dressing ingredients: extra-virgin olive oil, balsamic vinegar, honey (or maple syrup), salt, and black pepper. Set the dressing aside.
  2. In a large salad bowl, place the mixed greens as the base for your salad.
  3. Add the sliced red onion and crumbled feta cheese on top of the greens.
  4. Arrange the sliced peaches over the greens. You can place them in a circular pattern or arrange them to your liking.
  5. Sprinkle the chopped toasted pecans or walnuts over the salad for a crunchy texture.
  6. If you’d like, garnish the salad with fresh basil leaves, which complement the flavors of the peaches.
  7. Just before serving, drizzle the dressing over the salad. You can use all of the dressing or add it to taste, depending on your preference for the level of dressing.
  8. Gently toss the salad to combine all the ingredients and coat them with the dressing.
  9. Serve your peach salad immediately as a refreshing appetizer, side dish, or a light and healthy main course.
