Peaches & Cream Loaf Recipe
Ingredients:
-
For the loaf:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream (or plain Greek yogurt)
- 1 cup fresh or frozen peaches, diced (you can also use canned peaches, drained)
-
For the cream cheese filling:
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
-
For the topping (optional):
- 2 tablespoons brown sugar (optional, for a sweet topping)
Instructions:
-
Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
-
Prepare the peaches: If using fresh peaches, peel and dice them. If using frozen peaches, thaw them and drain excess liquid. Set aside.
-
Make the loaf batter:
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Alternate adding the dry ingredients and sour cream (or Greek yogurt), mixing just until combined.
- Gently fold in the diced peaches.
-
Prepare the cream cheese filling: In a small bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.
-
Assemble the loaf:
- Pour half of the batter into the prepared loaf pan, smoothing it into an even layer.
- Drop spoonfuls of the cream cheese mixture over the batter, and then spread it out gently to create a layer.
- Top with the remaining batter, smoothing the top with a spatula.
-
Optional topping: Sprinkle the brown sugar over the top of the loaf batter if you want a slightly caramelized, sweet topping.
-
Bake the loaf: Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center of the loaf comes out clean. The top should be golden brown and slightly cracked.
-
Cool and serve: Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Serving Suggestions:
- Enjoy it as is for a moist, flavorful treat.
- Serve with a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.
