Here’s a delicious and easy Peaches & Cream Loaf recipe that combines the sweet flavor of peaches with the richness of cream for a moist and indulgent treat.

Peaches & Cream Loaf Recipe

Ingredients:

  • For the loaf:

    • 1 1/2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 teaspoon cinnamon (optional)
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 cup sour cream (or plain Greek yogurt)
    • 1 cup fresh or frozen peaches, diced (you can also use canned peaches, drained)
  • For the cream cheese filling:

    • 8 oz cream cheese, softened
    • 1/4 cup powdered sugar
    • 1/2 teaspoon vanilla extract
  • For the topping (optional):

    • 2 tablespoons brown sugar (optional, for a sweet topping)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

  2. Prepare the peaches: If using fresh peaches, peel and dice them. If using frozen peaches, thaw them and drain excess liquid. Set aside.

  3. Make the loaf batter:

    • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
    • In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • Alternate adding the dry ingredients and sour cream (or Greek yogurt), mixing just until combined.
    • Gently fold in the diced peaches.
  4. Prepare the cream cheese filling: In a small bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.

  5. Assemble the loaf:

    • Pour half of the batter into the prepared loaf pan, smoothing it into an even layer.
    • Drop spoonfuls of the cream cheese mixture over the batter, and then spread it out gently to create a layer.
    • Top with the remaining batter, smoothing the top with a spatula.
  6. Optional topping: Sprinkle the brown sugar over the top of the loaf batter if you want a slightly caramelized, sweet topping.

  7. Bake the loaf: Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center of the loaf comes out clean. The top should be golden brown and slightly cracked.

  8. Cool and serve: Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
