Peanut Butter Cake with Peanut Butter Frosting

Ingredients for the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup peanut butter (smooth or chunky)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup milk

Ingredients for the Peanut Butter Frosting:

  • 1/2 cup unsalted butter, softened
  • 1 cup peanut butter (smooth or chunky)
  • 3 cups powdered sugar
  • 2-4 tbsp milk (adjust for desired consistency)
  • 1 tsp vanilla extract
  • Pinch of salt (optional, to balance sweetness)

Instructions:

For the Cake:

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. Cream the butter and peanut butter: In a large bowl, use an electric mixer to beat the softened butter and peanut butter together until smooth and creamy. Add the granulated sugar and brown sugar, and beat until light and fluffy, about 3 minutes.
  4. Add the eggs and vanilla: Beat in the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  5. Alternate adding the dry ingredients and milk: Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
  6. Bake the cake: Divide the batter evenly between the prepared cake pans. Smooth the tops and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

For the Peanut Butter Frosting:

  1. Beat the butter and peanut butter: In a large bowl, beat the softened butter and peanut butter together until smooth and creamy.
  2. Add the powdered sugar: Gradually add the powdered sugar, 1/2 cup at a time, mixing until fully incorporated.
  3. Adjust the consistency: Add 2 tablespoons of milk and beat until smooth. If the frosting is too thick, add another tablespoon of milk to reach your desired consistency. Add vanilla extract and a pinch of salt if desired.

Assembling the Cake:

  1. Frost the cake: Once the cakes have completely cooled, spread a layer of peanut butter frosting on top of the first cake layer. Place the second layer on top, and spread frosting generously over the top and sides of the entire cake.
  2. Decorate (optional): You can sprinkle some chopped peanuts or drizzle extra peanut butter over the frosting for an added crunch or flavor.
  3. Serve: Slice and enjoy the rich, creamy goodness of peanut butter heaven!
